Australia Reboot!
I’ve heard it said that four out of every five Americans dream of traveling to Australia. As a native Aussie, I know why – Our country truly is like no other place on earth! Paul is an exciting speaker who loves Australia and thinks everyone should visit which is why he formed his company, About Australia. In 2019, Paul came by and said he had an idea for a new trip to Australia – an exploratory trip to the Coral Sea. The trip would include dives on the Yongala, a historic wreck and the largest wreck in Australia, as well as exploratory dives to areas of the Coral Sea where dive boats don’t go. He basically said — are you interested? We were hooked! Of course then came COVID and Australia was closed! So, we have rebooted the trip for 2022!
Come learn about this trip as well as diving and touring in Australia. This is your opportunity to find out more about the land down under. Paul Watkins – came to the United States and feel in love with America and well, here he is.

Ingredients
- 2 oz Rum
- 1 Oz Orgeat Syrup (you can substitute Amaretto)
- 1 oz fresh lime juice
- 3 dashes of Angostura Bitters
- Garnish with orange peel

Cannonball Eleven Cabernet Sauvignon
TASTING NOTES: High Dive exhibits aromatics of red cassis, notes of strawberries and crushed blackberries and tones of clove and white pepper. Rich, plush mouthfeel with sweet dark currant and blackberry fruit. Fabulous density and weight, with excellent texture. Bold and complex, with hints of dark chocolate and espresso.
Aged 20 months in 60% new French oak.

The Ace
Ingredients:
- 250g frozen mango pieces
- 250g frozen pineapple Pieces
- 500ml coconut water
- 80ml lime juice cordial
- 2 cups ice cubes
- 125ml coconut crea
Directions:
- Blend the mango, pineapple, coconut water and lime cordial in a blender until smooth. Divide the ice cubes among 4 large serving glasses and top with the mango mixture.
- Spoon the coconut cream on top of the mango mixture. Decorate with shaved coconut, lime slices and pineapple tops, if you like.
